Gluten Free Smores


To make these I used:
*Regular Hershey's Milk Chocolate
*Gluten Free Health Valley Rice Bran Crackers (Bought at Sprouts Framers Market)
*Kraft Jet puffed marshmallows

Note the marshmallows and chocolate bar seem to be gluten free after doing my research online.

Lara Bars


James and I did the 3 mile walk for the American Heart Association recently and we got all kinds of goodies including Lara Bars. Now I am not a big snacker so I would never buy these myself initially but since they were free I tried them. They were AMAZING and are Gluten Free, Dairy Free, Soy Free, Non-Gmo, Vegan, and Kosher.... Yipee.

They have many flavors too.

Dippity doo dah

This dip goes well with rice and Indian snacks

Cilantro yogurt/sour cream dip Recipe

Ingredients
• A bunch of cilantro with stalks removed
• 2 cloves of garlic or 1 tsp of crushed garlic
• ½ tsp of cumin seeds or ¼ tsp of cumin powder
• 2 tbsp water
• 1 small tub of yogurt/sour cream
• Salt to taste

Method

1. Grind all ingredients expect salt and yogurt/sour cream in a food processor
2. Take a tsp of this paste and add to yogurt/sour cream
3. Add salt to taste
4. Freeze remaining paste individually in ice cube squares in ice cube trays for future use. You will have to nuke them/let them naturally defrost to mix in yogurt.

Kebab (indian meatball dish)

Another easy Indian dish

Kebab Dish

Ingredients
1lb hamburger
1 tbsp ginger and garlic
½ tsp Red chili powder
½ tsp turmeric
1 tsp salt
1/2 tsp Garam masala
2 tbsp oil
Pinch of cumin
Half a chopped onion
Small can tomato sauce

1. Pound hamburger with all spices except cumin
2. Make mixture into meat ball shapes
3. In a pan heat oil and fry cumin and onion.
4. Add meatballs and brown them
5. Add tomato sauce and cook for 15 minutes

Okra


I love Okra and so do the children. Here is a simple Indian Okra dish and I cook my okra in a wok so i have plenty of room to fry it evenly.

Ingredients
1. 1 pound of okra
2. 3 tbsp veg oil
3. 1 onion chopped in grinder
4. ½ tsp salt
5. ½ tsp red chillies
6. ¼ tsp turmeric
7. 1 tsp coriander powder
8. ¼ can tomato sauce


Method
• Put oil in pan on medium
• Add onion and brown
• Then add okra and brown with onions
• Add all spices and tomato
• Cook until okra is done

Egg and Potato Dish

This is a very simple Indian dish. It is served with roti and you can find the recipe for roti on a previous blog. What I like about this dish is that it is meatless and so if you are trying to cut down on meat intake this is a good recipe.

Ingredients
6 potatoes
2 cups water
1 cup of tomatoes
Half teaspoon chili powder
Quarter teaspoon turmeric
1-2 large spoons of oil

Braise oil and spices on medium heat in a pan for 5 minutes. Add tomatoes and then water. Stir. Add potato and cook for 20 minutes. Add eggs then cook for 10 minutes. Serve with roti.

GF Corn bread muffins


I didn't realize that most cornbread mixes had wheat flour but luckily Pamela's came to the rescue again when we needed some corn bread muffins to go with our chili.

Pamela's Buttermilk Cornbread Muffins

1 bag Pamela's Cornbread & Muffin Mix
1/2 cup sugar
8 TBSP butter, melted
2 eggs, large
1 cup buttermilk

Yield: one 8-inch square pan

Preheat oven to 375ยบ.

In bowl, combine all ingredients.

Corn Muffins: fill muffin cups 3/4 full. Bake for 15 to 17 minutes. Yield: 12 muffins.
