So recently I found out that I have a gluten intolerance. My mom was diagnosed much later in life with full blown celiac disease. I am not willing to take a chance so I am avoiding gluten as much as I can. I have felt much discomfort over recent years after consuming food and after keeping a mental food diary I have figured gluten to be the culprit. Thankfully I love cooking and experimenting so now I have to modify many recipes so I can enjoy the foods I love. I found a wonderful flour processing place who sold me a bulk container of flour so now I have to start figuring out how to work with it. Its not as easy as working with regular wheat flour so it is going to take a lot of trial and errors. Let's see how i do!

having to rethink it all...or maybe not

I have to say the hardest challenge so far has been the Indian flat bread called roti that I have fondly grown up eating. I nearly cried several times after attempting to make it and last night was a breakthrough moment. I felt like I had just won the Nobel Peace Prize since my eldest said "Hey Mom this tastes just like normal roti." SCORE! The prior attempt at roti making was FAIL, There was the episode where my eldest sniffed at the the roti and asked why it was brown (sorghum based) and flung it to her brother. My heart sunk and little Zayne cried because by sniffing it, she had inadvertently transferred germs onto it. What drama! Oh well ....so yesterday was amazing. I only used a GF flour mix and added the Xanthan Gum per usual but I thought hmmmmmm maybe I should let it rest for a while. So I covered it up with a towel and 15 minutes later it became this amazing dough that I could actually roll with a regular rolling pin. When I rolled the first one James said "What??? no plastic on top and under to prevent it from sticking?" I said "No, I think we have done it baby." :)
